Chicken, Pesto and Roasted Red Pepper Panini

I was in the mood for a "good" sandwich. Good meaning more than just a few slices of lunchmeat and cheese between two pieces of bread. But, I didn't want to go out and buy one.  So, I came up with this.  It was a lot of chicken, bacon, pesto, roasted red pepper, honey mustard goodness!  :)

Sorry for the lack of pictures, I was too excited to get it made before I thought about pictures...ha.  Also, it tastes so much better than it looks, I squished the bread a little too much. :)

Ingredients:
2 slices of french bread
1 chicken breast, sliced in half length wise
2 slices of bacon
A small amount of cheese ( I used shredded cheddar, it's what I had, but any kind works.)
2 pieces of roasted red pepper, store bought in jar
A small amount of pesto, store bought
A small amount of honey mustard
A small amount of butter

Cook the chicken breast in a skillet (season as desired).  When chicken is almost done add the slices of bacon to the same skillet, cook.  When chicken and bacon are done cooking place chicken and bacon on a piece of paper towel to absorb the grease and wipe out the skillet.  Or I used a flat cast-iron tortilla warmer/cooker. 

Spread a small amount of butter on one side of one slice of french bread. Don't over do the butter or it will be soggy.  Place butter side down in skillet.  Spread the other side with pesto. 

Place chicken on top of bread in skillet.  Top with cheese and red pepper slices. 

Spread butter on one side of the other slice of french bread.  Spread honey mustard on other side of bread.  Place honey mustard side down on top of pile in skillet. 

Press down on the sandwich or place a heavy pot on top of it for a few minutes.  Flip the sandwich and toast on other side for a few minutes. 

That's it!  Adding onions or  fresh spinach to this would be great too.
